Pancakes are another answer to the scramble of using up rich foods (like butter, eggs, and milk) before Lenten fasting in a tradition known as Shrove Tuesday. The practice of devouring pancakes for the holiday is celebrated by people all over the world, regardless of religious affiliation. It’s especially popular in the U.K., where hilarious, pancake-themed events like races or flipping competitions are held all over.

It certainly helps that pancakes are an endlessly versatile, super-speedy dish to make (and eat). To celebrate yourself, all you need to remember is one basic ratio: 1 cup flour : 1 cup milk : 1 egg. Combine wet and dry ingredients, add your favorite mix-ins, cook on medium heat in a skillet until the pancakes are dry around the edges and you can see bubbles forming on the top, flip, cook until golden underneath. Top with syrup to your heart's desire!

<p>Ditch the diner and DIY</p>Though they’ve always been a brunch menu mainstay, pancakes are making a comeback in a big way. Personally, I’m thrilled. A longtime member of a “pancakes for the table” family, I’m no stranger to enjoying those pillowy cakes on a regular basis. While I rarely think twice about ordering a stack at a restaurant, and have had plenty of lazy pancake Sundays at home, I rarely think to make them when I’m having people over for brunch.
