This 25-Cent, One-Ingredient Sauce Is Just What You Need to Rescue Leftover Pasta

This 25-Cent, One-Ingredient Sauce Is Just What You Need to Rescue Leftover Pasta You know what’s easier than any fancy concoctions? Frying an egg. Béchamel. Velouté. Espagnole. Hollandaise. Sauce tomate.

Like this pasta sauce recipe by Marcella Hazan. You need three ingredients , and you’re going to throw one out. This recipe has bounced around cooking sites for over a decade, and Smitten Kitchen tells it best , but here’s the gist

Turns out you can still whip up a damned good sauce with only three ingredients . Yep, that's right: three ingredients , not including salt. Pasta sauces can be complex and require lots of ingredients , but they don't have to.

If Julia Child taught America how to roast chicken, Marcella Hazan taught us how to make good pasta. There's not a blockbuster movie about Marcella's life (yet), and none of her cookbooks have become best-sellers 48 years after they were first published (like Mastering The Art of French Cooking did). But pretty much everything we know about good homemade Italian food, we owe to her.

However, that's not to say she's a totally traditional cook. Among her most famous recipes is tomato sauce with onion and butter, and everything about it is a little unconventional. The onion is unsauteed, the sauce simmers for less than an hour, and there's a lot of butter. It's the easiest and, most likely, best red sauce you'll ever make at home. Here's what to do:

Here's What Your Tomato Sauce Is Missing

Here's What Your Tomato Sauce Is Missing Tasting, tweaking, and tasting again is key, as is having a little lineup of extras you can toss in to bring that special something. Here are my favorite things to add to tomato sauce when it needs a little rounding out, whether I’m starting from scratch or jazzing up a store-bought jar:If you’re missing umamiAdd some anchovy paste, fish sauce, or parmesan cheese. (You can also add a parm rind, but try to add it early on.) All three of these bring that savory flavor your mouth craves. Tomato paste can also be added, but you need to brown in first.

This is the Best Alfredo Sauce , it only takes 5 minutes to put together and 3 ingredients . Try it today! My absolute favorite kinds of pasta sauces are creamy ones. Actually, I think all food that contains cream is my favorite kind of food. I may have a problem.

1. Add everything to the pot. Combine a 28-ounce can of whole peeled tomatoes, 5 tablespoons of butter, a peeled and halved onion, and a few pinches of salt.

2. Simmer it. Bring tomatoes to simmer and cook for 45 minutes, breaking up the tomatoes with a wooden spoon every so often.

3. Season and serve. Season sauce to taste and discard onion before tossing with pasta.

Pleeease don't be afraid of the butter. It gives this sauce a velvety richness that tastes like something only a fancy restaurant can achieve. (I realize "velvety" is an obnoxious food descriptor but it's truly the only word that works here.)

Expensive Pasta Is Worth It—Here's Why .
And by "expensive" we mean "a couple of dollars more than the cheap stuff"—money well spent, if you ask us.But why? Are you just paying for that extra branding? Is it worth the extra change because it makes you feel fancy? Isn’t dried pasta all the same? It’s just flour and water, right? What could make it better than the everyday dried stuff? Great questions. Here's why the pricier stuff is totally worth it.
