  A Look Inside Ikinari Steak, The Japanese Chophouse Without Chairs Kunio Ichinose, chef, owner, and founder of Ikinari Steak A look at Ikinari Steak, the hit Japanese chain opening on Thursday Popular Japanese chain Ikinari Steak— known for being a standing-only steakhouse — opens the doors on its first U.S. outpost on Thursday in the East Village. The new restaurant at 90 East 10th St. will have sit-down spots for ten diners, but most of the space in the dining room is dedicated to high table tops for people who must stand as they eat. In Japan, the idea is to feed people quality steak as quickly as possible, at a modest price. Besides the standing portion of the meal, dining at the restaurant is intended to be an interactive experience. Patrons choose their cut of meat by the gram, and a butcher cuts and weighs it right in front of them. They cook it only one way, rare. The steak then arrives at the table on a sizzling cast-iron platter, where people can choose from a dizzying array of sauces, dressings, and other additives to top their meal. It’s just the beginning of the chain’s presence in New York. Ambitious founder Kunio Ichinose and his stateside operations manager Takashi Tsuchiyama want to open 20 more locations in Manhattan in the next five years. Believe it or not, there are some people in there who don’t prefer their steak medium rare, or even rare… they prefer it raw. As in, cold, uncooked, completely raw. We’re not passing judgment, and thankfully we live in a time when a high-quality piece of beef won’t make you sick if you eat it raw (just think about carpaccio and tartare). But if you wanted to order a completely raw steak at your favorite steakhouse, would the kitchen allow it?

High-end restaurants tend to want to go above and beyond the call of duty, granting any request (within reason), and they’re proud enough of their steaks to serve them raw. At certain restaurants, the kitchen may not be comfortable serving a raw steak because they can’t guarantee it won’t make you sick; we wouldn’t recommend ordering a steak at these restaurants to begin with.

I'm not a thrill-seeker, yet I've ordered and eaten raw steaks at restaurants here in the USA and in many other countries abroad – even in India able to do so by going to a restaurant that serves steak AND raw meat dishes (like sashimi, carpaccio, tartare) or a steakhouse where the manager/chef

Don’t get me wrong, a blue steak is not Steak Tartare (which is completely raw ), it is cooked though of I can cook a steak that is the same as the blue pic but warm, it’ s just what happens when you don’t I was converted about 9 years ago, when I went to a steakhouse and ordered a meal which

So if you want to eat a raw steak, make sure you are at a very high-end steakhouse. Then try your hand at ordering your steak completely raw. You might get a couple strange looks from the server, but don’t be afraid to crack a joke: “Just ask the chef to show the meat a picture of fire,” or something along those lines. Heck, the chef himself might even come out to make sure of what you’re asking for. But if they won’t do it, don’t press the issue; as mentioned, that’s probably because they can’t vouch for the steak’s quality and cleanliness, and there’s a chance it might make you sick.

If you promise someone a sandwich with steak and eggs, and that person pays for a sandwich with steak and eggs, you better serve them a sandwich with a slice of red-blooded steak with eggs. Otherwise, they might sue you for false advertising. OK, that sounds dramatic, but meet Chufen Chen from Queens, New York, who filed a new lawsuit against Dunkin' Donuts in which she and her lawyers are claiming that there's no steak in Dunkin' Donuts' Angus Steak and Egg Sandwich. As Grub Street reports, Chen apparently came to this conclusion after reading the list of ingredients for the "steak" sandwich in question.
